Magical Monday #2

Hello Everyone! I hope you all had a fantastic weekend! We sure did! I was not feeling that great this week, personal health issues going on right now that I am trying to take care of. Stress being a huge part of why I am going through this "issues". This is our last trade show at work and my boss and supervisor are gone for the week at the trade show. Last week was just really stressful and intense and hubby really wanted me to focus on rest. If I get too stressed I have stomach attacks which is part of my stomach condition. It is not fun at all! Anyways, so this weekend I focused on rest and relaxation. Friday night was a fun night! We went and visited my friend Nik who works at The Gift Goddess in San Juan Capistrano. There shop is excellent, if you are ever in this area be sure to check them out. I have been working a lot with past life stuff lately and I asked Nik to make me an oil for my meditations and tarot/oracle spreads. She made me a wonderful oil that not only smells fabulous, it worked perfectly during my past life oracle spread last night! I was blown away! I also used it for meditation after the spread, I just burned the oil in my oil burner. The whole house smelled amazing last night! Anyways we visited with her for a bit and then I went shopping for stuff for my Yule altar which I set up on Friday night while watching Grimm. It looks really nice and I am extremely happy with it!

Saturday we went to the used book store and I got a few new books. I also went to Michael's to get some decorations to decorate my Yule besom. It turned out fabulous as well and I am really happy with it! I have been thinking about decorating a besom for each Sabbat but never got around to it and then while visiting Brenda last week, she and her friend Cindy were decorating one. I guess you could say it lit a fire under me to try decorating my own. I am very happy with it, it is hanging on the inside of our front door. I also made time to relax and paint my nails, thanks to Brenda for the new gold nail polish! We also filmed a video on The Great Rite and Sex Magick on Saturday which turned out to be pretty funny. It is already uploaded onto my channel. We also watched Zookeeper this weekend which was such a cute movie!

Sunday was for relaxing. Watching the football games with my man. I also took a long hot bath to soak my sore muscles. I got to chat with Brenda for a bit before dinner and then Cody and I watched Dexter. So all in all we had a great weekend. This weekend for me was about rest and de-stressing after the hellish week I had.

I hope you all had a wonderful weekend! Sending you love and light!! Bright Blessings!

Fall/Autumn Nails! I LOVE this color! Thanks Brenda!
I finished reading this Yule book this weekend! It was a wonderful read! I highly recommend it!

Fantastic Friday #1

Happy Friday Everyone! I hope everyone had a blessed Full Moon last night! I sure did. I came home from work and made dinner and while dinner was in the oven I pulled out my oracle cards and did a past life reading while burning some Full Moon incense. I found a great spread online a few days ago and have been wanting to try it. What better time then the full moon right? My skin was tingling with what the cards were telling me, it was almost like my soul was remembering. Tonight I plan on doing another reading I found for reincarnation. I am very interested in past lives and reincarnation, it's one of those subjects that I just feel is my calling. I am hoping to dive deeper into my meditations as well to uncover the mysteries of lives before this one.

Work has been driving me batty! I am so busy I barley have time to breath. I am just so happy today is Friday and the weekend is almost here! Just hours away! This is our last trade show of the season so I expect the craziness to die down after this week but I am exhausted. Coffee is my best friend right now. I will be doing some driving today as well and I am not looking forward to dealing with the crazy drivers around here. Oh well, at least it is Friday.

Yesterday we ended up making the Wonton Taquitos instead of pulled pork sandwiches. I will be making those tonight instead. The Taquitos were amazing, Cody kept raving about them, so they are husband approved. I plan on heading home after work, then picking up Cody and going shopping for my Yule altar decorations. I like having my altar set up before the sabbat so I have time to meditate on what each sabbat brings. Then I will be heading home to set up my altar and cook dinner. I also want to fit in an evening fall walk into the picture. We went on a long walk last night and it was absolutely beautiful! I not only want to do the reincarnation spread tonight but I also want to do a candle ritual for the Veterans tonight to honor there bravery for fighting for our freedom. A special thank you to all of them! I have also been thinking a lot of purchasing another besom and decorating it for each sabbat.

I got up early this morning with Cody but I did not have enough time to do Yoga or Strength Training since I had to be at work at 6:30AM. I also had to boil my moon water this morning and wanted to have that done as soon as I brought it in from outside. Moon water is done! Crystals are charged too. It was a successful full moon.

I hope you all have a wonderful weekend! Remember to make healthy choices! I love you all dearly!

Hungry Girl's Wonton Taquito Recipe

Ingredients:
One 12.5-oz. can 98% fat-free chunk white chicken breast in water, drained and flaked (about 1 1/2 cups)
1/2 cup salsa verde (a.k.a. green salsa)
1/3 cup shredded fat-free cheddar cheese
1/4 cup frozen corn, thawed and patted dry
1 tbsp. chopped roasted red peppers
16 small square wonton wrappers
Optional dips: red enchilada sauce, additional salsa verde, fat-free sour cream

Directions:
Preheat oven to 375 degrees. Prepare a baking sheet by spraying with nonstick spray and set aside.

In a medium bowl, combine the chicken with salsa and mix thoroughly. Cover and refrigerate for 15 minutes.

Drain any excess liquid from the chicken mixture. Add cheese, corn, and roasted red peppers to the bowl. Mix thoroughly and set aside.

Lay two wrappers flat on a clean, dry surface. Spoon a heaping tablespoon of chicken mixture onto each wrapper, and spread it evenly over the entire surface of each. Roll each wonton up tightly into a cigar-shaped tube. Place wontons on the baking sheet, seam side down. If needed, secure with toothpicks. Repeat with remaining wontons and chicken mixture.

Bake until crispy, about 15 minutes.

Allow to cool slightly. Remove toothpicks, if using. Then serve and, if you like, dunk in the optional dips!

Tasty Thursday #1

Happy Tasty Thursday everyone and happy full moon! I hope you all have an awesome day! Tomorrow is Friday! Yesterday I was swamped at work, this is our last trade show so we are extremely busy right now. I can't wait until it's all over. Last night I went home after work and made the Pizza Poppers that I found on Hungry Girl's website. They were so delicious! Cody really enjoyed them and kept saying he wants them for football day. They were so yummy, I wish I could send you all some! This was my first time cooking with won ton wrappers but it was actually pretty easy.

After dinner Cody and I went on an evening Fall walk. It was absolutely beautiful out. The moon was almost full and she shined her light upon us as we walked together hand in hand. It was a beautiful evening. As I mentioned yesterday, I was a little "up in the clouds" and felt the need for grounding so an evening walk in nature helped me feel more balanced. I took a nice hot shower using the homemade soap that my good friend Brenda made me. It smelled so delicious, Cody kept raving about how good i smelled! He said I smelled like a sugar cookie. Once we got home we decided to try and get back on our meditation routine as it helps us both to sleep better. When I was at the store last week I bought a new tea that I have not seen there before called Sleepytime Vanilla. I love Vanilla so I figured I was going to enjoy this tea. I am in love with this tea!! It is so delicious and perfect before bed during the Fall and Winter months.

I am feeling much more grounded today after walking and meditation yesterday. Tonight is the full moon so I plan on doing my ritual after dark. I am making healthy Pulled Pork Sandwich's  tonight after work. Then I am going to go for an evening walk under the full moon with Cody. It is a little chilly but last night I wore warm clothes, my scarf, and gloves and I was toasty. I am a night person anyway so I love being in nature when it is dark.

I woke up this morning and did my Yoga routine. It felt so amazing, and I really feel refreshed today. Brenda gave me a Yoga girl statue that I adore. It has such amazing energy. I have a little space set up where I lay my Yoga mat out where I put her, my oil burner, and a crystal. I tried to take a picture this morning but it was to dark so I am going to try and remember to take one after work when there is still sun light shining in. Seeing the Yoga statue really puts me into a meditative state and reminds me why I am on my mat that day. I have also been burning Tangerine oil in the mornings to wake me up and create a energizing aroma. I love waking up to my new Yoga routine. On Fridays, I have to be at work at 6:30AM instead of 7:00AM, so I won't have time to do my whole Yoga routine and I prefer not to only do certain sections. I have decided Friday mornings will be reserved for strength training.

I hope you all are having a wonderful day so far! Do yourself a favor, and make these pizza poppers. Husbands and Children will gobble these up! Happy Esbat!

 Hungry Girl's Pizza Poppers Recipe!

Ingredients:
1/3 cup light or low-fat ricotta cheese
12 slices turkey pepperoni (Hormel's is the best!), chopped
3 wedges The Laughing Cow Light Creamy Swiss cheese
1 1/2 tsp. tomato paste
1/2 tsp. dried minced onion
12 small square wonton wrappers
12 sprays I Can't Believe It's Not Butter! Spray
1 tbsp. reduced-fat Parmesan-style grated topping
1/8 tsp. garlic powder
1/2 cup canned crushed tomatoes
1/8 tsp. Italian seasoning

Directions:
Preheat oven to 375 degrees. Spray a baking sheet with nonstick spray and set aside.

In a medium bowl, combine ricotta cheese, chopped pepperoni, cheese wedges, tomato paste, and dried minced onion. Mix thoroughly and set aside.

Lay two wrappers flat on a clean, dry surface. Spoon a tablespoon of filling into the center of each wrapper. Moisten all four edges of each wrapper by dabbing your fingers in water and going over the edges smoothly. One at a time, fold the bottom left corner of each wrapper to meet the top right corner, forming a triangle and enclosing the filling. Press firmly on the edges to seal. Repeat with all remaining wrappers and filling, gently and evenly placing each "popper" flat on the baking sheet.

Spritz the top of each popper with a spray of butter spray. Evenly sprinkle with Parm-style topping and garlic powder.

Bake in the oven until golden brown, about 10 minutes. Allow to cool slightly.

Meanwhile, combine crushed tomatoes with Italian seasoning in a microwave-safe bowl. Stir well. Microwave for 1 minute, or until hot. Give seasoned tomatoes a stir and serve with poppers for dipping. YUM!

Wonderful Wednesday #1

Happy Wednesday Everyone! I hope you all are having a wonderful day so far! Yesterday threw me off schedule a little bit. I had to drive to San Diego for work, it was a little unexpected but I was happy to get out of the office for a while. I ended up having to wait down there for about an hour and a half, so I called my friend Brenda up to see what she was up to. You may know her from twitter as she is active on there as well. It was so nice to catch up with her! She is so sweet! She gave me the cutest gift too! Some awesome new nail polish, a soap she hand made that smells like you could literally eat it, a Yoga/India woman statue, a clear quartz point, and an adorable witch hat pin. She is seriously one of the sweetest people I have ever met and even more wonderful in person! It was such a blessing that my work sent me down that way so I could meet up with her. I stuck to my healthy eating and brought my lunch with me and ate it in my car on the way down. It was a beautiful day to be outside.

By the time I got home that night it was a little later then I expected and Cody had to take Makena to get her second shot at the vet. I hate driving in traffic (ironic since I live in CA), where you always drive in traffic. I left my anxiety medication at my office and I did not go back to work after driving back from San Diego. So I just relaxed at home while Cody took Makena to the vet. I also started on dinner while he was gone. We had Phili Cheese Steak's last night! We both love this recipe.

I was exhausted after driving all day so I decide to use yesterday to relax and wind down from the hectic day. I am trying to listen to my body more these days instead of forcing myself through a workout. This morning I woke up with a horrible head ache and an IBS stomach attack. What a great way to wake up right? Ugh. I decided to take a hot epsom salt bath which usually helps soothe my stomach. I am feeling much better now. I just feel as if my head is a bit in the clouds today, I really need to ground asap. I also did not sleep well last night which is normally leading up to the full moon for me. It seems to really mess with my sleep patterns. Almost as if I am in an astral plane without really being aware of it.

Tonight I plan on heading home from work and going on a walk with Cody. Walking always seems to relieve my stomach pain. Then I am making a new Hungry Girl Recipe I found! Pizza Poppers! I love trying new recipes, it's so exciting to try something different! Then Yoga tomorrow morning! I love doing my sun salutations while watching the sun rise from my window.

Hungry Girl Phili Cheese Steak Recipe
Ingredients:
2 tsp. fat-free sour cream
1 slice fat-free American cheese
1/3 cup sliced onion
1/3 cup sliced bell pepper
1/4 cup sliced mushrooms
1 tsp. olive oil
1/8 tsp. black pepper, or more to taste
1 Boca Original Vegan Meatless Burger
One 100-calorie flat sandwich bun (like Arnold Select/Oroweat Sandwich Thins)

Directions:
In a small microwave-safe bowl, combine sour cream with cheese, breaking cheese into small pieces as you add it. Mix well and set aside.

Bring a large skillet (or grill pan) sprayed with nonstick spray to medium-high heat on the stove. Add veggies, drizzle with oil, and sprinkle with black pepper. Stirring occasionally, cook until veggies have partially softened, about 3 minutes.

Move veggies to one side of the skillet and lay burger flat on the other side. Cook until veggies are soft and burger is cooked through, about 8 minutes, stirring veggies occasionally and flipping burger about halfway through. Remove from heat and set aside.

Split open the bun and, if you like, lightly toast. Plate bun halves and place the burger on top of the bottom half. Evenly top with veggies and set aside.

Microwave sour cream and cheese for 15 seconds, or until hot; stir thoroughly. Microwave for another 10 seconds, or until cheese has fully melted. Mix well and immediately spoon over the veggies.

Finish off your burger with the top half of the bun. Now enjoy!

Terrific Tuesday #1

Happy Terrific Tuesday everyone! Last night, I came home and made Baked Mac and Cheese, one of my favorite Fall comfort foods! So delicious. We ate dinner and then watched the Monday night football game. Cody reminded me that rest days are important in my workout routine. I used to push myself 7 days a week without a break and I would always end up with injuries. My week started on Saturday with my weigh in and measurements. Cody is right, taking one day a week to rest is vital for your body to recover from your workouts (especially when you are first starting out). So, he offered to give me a long back rub while he watched the game. I have a wonderful husband! It felt good to relax and unwind. I urge you all to realize that it is important to take at least one day off a week to let your muscles recover.

We have been trying to go to bed early since Cody's new schedule has him starting work at 6AM which means we are waking up at 5AM. I had a restful night's sleep and woke up this morning for an amazing Yoga session. I am loving my new routine! I love being able to wake up and have an hour to do Yoga in the mornings. It really helps me start the day off on the right food. I am very excited for this new schedule as I feel it will keep me accountable. I realized today that I am doing Yoga even more than when I had a Yoga Studio membership. I am one happy zen girl today! I can't wait to be able to teach someday, I love yoga and want to share that love with everyone I can.

So tonight, Makena has her next shot appointment and Cody is going to take her to the vet for me while I do a kickboxing DVD. I LOVE to kickbox, it's a fantastic workout and it shapes your arms, abs, butt, and legs! What more can you ask for!? Then I am going to try and fit some strength training in. I am making healthy Phili Cheese Steaks tonight for dinner with Boca Burgers. Trust me, they are delicious and taste like the real deal!

I hope everyone is having a wonderful healthy week so far! Sending out lots of love and light to all!!

Magical Monday #1

Happy Magical Monday Everyone! I hope you all had a wonderful weekend! Cody and I had a great weekend. As most of you know, I started my diet and fitness plan on Saturday. Saturday morning Cody took Samhain to the vet for his next shot. I rolled out my Yoga mat and spent the next hour in my Yoga Trance. I love Yoga, and I have missed it dearly the last few weeks. It felt like heaven to be stretching again. I always wear a heart rate monitor during my fitness routines which I highly recommend because it allows you to know the amount of calories burned based on your weight/height/age. I love mine and I don't go anywhere without it! It really has helped me push myself to new levels. When Cody got home I made us breakfast, my new favorite recipe garlic bagels! Yum! I try to eat a lot of garlic during the cold/flu season to prevent myself from getting sick. Then I sat down and wrote out my grocery list and planned my meals for the next week. This is a tip I suggest to everyone who wants to start eating healthier! It helps a lot to know ahead of time what meals you have planned out for the week. It allows you not to make excuses.

After our trip to the grocery store we headed out to the beach to watch the sunset. We have a beach trail which spans a few miles wide and Cody and I walked the whole thing and watched the sunset together, it was beautiful! Plus I burned 600 something calories so I can't complain about that either. It was a beautiful sunset and I was so happy to be enjoying it with my husband. After our walk I made a new recipe called Apple Cranberry Salad! I am going for Fall themes this week to celebrate the season! It was amazing! On Sunday we woke up and had breakfast and then headed straight to the beach. Cody wanted to surf and I wanted to go for a jog along the beach trail. It started raining while I was on my jog, and it felt so amazing. I love rain. It was so purifying to be jogging in the rain. I headed back to where Cody was surfing which was the pier in San Clemente, I jogged along the pier and tried to get his attention while he was out in the water. He finally saw me and when he got out of the water he said "You look so happy, you have the biggest smile on your face." What can I say, I love rain. Honestly, I shed a couple tears while the rain gently hit my face, it was like the Goddess was purifying me of all of the pain and hurt this past year telling me "Start anew my child." I felt so at peace with the world and with myself.

We headed back up the hill to make lunch. It was Sunday so it was a football day in our home. I always try to make something special for Cody on Sunday's during the game. I made him healthy onion rings with queso dip! They were so delicious and the best part...they were guilt free! I got some chores done that I needed to do around the house and by the time I knew it, it was dinner time. I made another salad for dinner. I like to plan my Salad's for the beginning of the week so the lettuce and produce stays fresh. I made us a new recipe called Special Spinach Salad. It was so delicious! We both finished our bowls!

This morning was the start of Cody's new schedule which means he went to work at 6AM. I got up at 5AM with him and started my Yoga DVD. I lit some of my favorite oil in my oil burner and at first my body was stiff since it was so early in the morning. By the third sun salutation my body was warming up and thanking me for coming to my practice today. I feel so energized and my body feels amazing this morning. I also had time to make myself a bagel for breakfast. I feel as if all of those heart openers in Yoga did not only do so physically. I am feeling so positive and full of love today!

So tonight, I am planning on hitting the beach trail again. Then I will be making us a healthy version of baked mac and cheese! One of my favorite Fall comfort foods...made guilt free! We both enjoy cooking and spending time together outside so this new plan is working out great! I feel fantastic. My body is sore, but in a good way if you know what I mean. I am going to try to fit in 3 strength train routines this week as well. I am a cardio girl, so I will be doing some form of cardio everyday as well as my Yoga in the mornings! What have you done to encourage healthy habits this weekend?

I also want to tell you guys about a calorie counting app called Fitness Pal. I have it on my smartphone and it works great for keeping yourself accountable! You track your food for the day and for each meal. It also allows you to keep track of your water intake! It also allows you to track your fitness! It's a great app and it helps you to stay accountable. If you don't have a smartphone, you could always use a cute journal to write down your eating and fitness routine!

Happy Witch's New Year!

Happy Witch's New Year to all who celebrate it! I hope you all had a very blessed Samhain! I know I did! This was my first ever Sabbat ritual. I did my self-initiation ritual Monday afternoon, and it went amazing. I honestly can not believe that I have been studying for a year and a day already, it goes by so fast! I feel so blessed to have found this spirituality. We did a Samhain ritual and we had a silent supper! I cooked a 3 course meal for our silent supper, it was so gratifying. The energy was extremely intense, and I am so glad that our ancestors chose to join us in our Samhain rite. I already can't wait until next year! Pictures of Samhain and pumpkin carving are over at my facebook, I am under the name Jenn Embers if you would like to see our pictures or send a friend request. I would love to have you on Facebook!

With the Witch's New Year among us, I have decided to start putting some drastic changes in motion. So much has happened this past year and I am ready to move on and emerge a stronger person because of it. I get a lot of e-mails and messages on YouTube regarding weight loss and fitness, so that is why I decided to create this blog. With the New Year, new changes are made. I decided to cancel my gym membership and work on getting fit at home. I have posted a video on my YouTube channel titled "Fitness Witch-Happy Witch's New Year", which also explains my goals and exciting changes I will be making.

I absolutely LOVE to cook healthy and I am so excited to share all of the amazing recipes I have learned over the years. I have binders full of healthy recipes and I subscribe to many healthy eating magazines and blogs. I also believe in still eating what you love...just in a healthier version! I adore Hungry Girl, her website and T.V. show are so inspiring! My husband loves her too because he get's healthy onion rings every Sunday during football season. I will be posting healthy recipes here and on my YouTube Channel as well as healthy snack and eating ideas for on the go Witch's like myself!

I will be updating this blog 5 days a week to keep myself on track and to check in with all of my other fitness witch's! Happy Witch's New Year! May this new year bring you and your loved ones great blessings!!

Love,
